Bread Baking: Cheese Crackers

 Goldfish crackers aren't available in Germany. So, we had to find a cheesy alternative. This is my attempt.

Cheese Crackers:
2 cups (240g) grated sharp cheddar cheese
1 1/2 cups (170g) flour
1/2 tbsp sugar
1/4 tsp paprika
1/4 tsp kosher salt
1/2 cup (125g) cold butter
3 tbsp cold water


Make sure your cheese is finely grated or use a food processor to combine ingredients. Combine dry ingredients. 



Cut in butter. Toss in cold water. 



Press into dough balls and flatten. Wrap in plastic wrap and chill for about an hour. 



Roll out very thinly and cut into small squares or whatever shape you wish. 



Puncture the center of each cracker with a toothpick. 


Sprinkle with kosher salt and bake at 375°F or 190°C for 18-20 minutes. 



Allow to cool before eating as they will crisp up after cooling.
