Recipe: Sugar-Free Carrot Cookies

 This recipe was for a friend who was recently diagnosed with diabetes. 

Sugar-Free Carrot Cookies:
1 cup (250g) butter
3/4 cup (150g) xylitol
2 eggs
1 cup (110g) shredded carrots (about 2 medium carrots)
2 1/2 cups (310g) flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon


Cream butter. 


Cream xylitol and oil into the butter. 


Beat in eggs and carrots. 


Add baking powder, salt and cinnamon. Stir in flour. 


Spoon onto a lined baking sheet. 


Bake at 350°F or 180°C for about 10 minutes. 

These cookies are soft and cake-like. They're not sweet really at all. They're kind of bread-like.
