Recipe: Breakfast Cookies

 These cookies have some great wholesome ingredients and can act as a substitute for breakfast.

Breakfast Cookies:
1 1/2 cup (190g) flour
2 1/2 cups (225g) oats
2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 cup (250g) peanut butter
1/2 cup (100g) brown sugar
1 egg
1 tsp vanilla extract or 1 tbsp vanilla sugar
2 mashed bananas
2 shredded apples
1/2 cup (80g) chocolate chips


In a large mixing bowl, cream peanut butter and bananas. 



Stir in apples, egg, brown sugar and vanilla. Stir in baking soda, salt and cinnamon. 



Stir in flour and oats. 


Fold in chocolate chips. 


Spoon dough onto lined baking sheet. 


Bake at 350°F or 180°C for about 10 minutes. 

These cookies are lovely. Not very sweet, but full of texture.
My kids literally love them. We keep them in the fridge to help the fruit last longer.
