Daisy Cake

 I love the look of simple elegance. I've been meaning to make a cake like this for a while. I decided it was time. I start out with a 6-inch cake dummy and frost it with vegan American buttercream. Then I used a large plunger cutter to cut out a lot of daisies. I start out by cutting them in half and pressing them onto the bottom of the cake. Then I layered the daisies going up. And I absolutely covered the cake with daisies. Isn't it gorgeous? Simple and elegant. Recipe: Spice Cake

 Spice cake is an interesting cake. Most of my cake recipes can be brought back to based either on my vanilla cake or chocolate cake. However, I didn't want to do that for spice cake because it is full of flavor, and slightly denser than vanilla cake, but not as dense as chocolate. So, it kind of needs to be its own thing. Spice Cake: 2 cups (250g) flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp cloves 1/4 tsp ginger 1/2 cup (125g) butter 1 1/2 cups (300g) sugar 1/2 tsp vanilla extract or 1 1/2 tsp vanilla sugar 2 eggs 1 1/4 cup (280mL) buttermilk Combine all dry ingredients in a bowl.  Set aside. Cream butter.  Add sugar and vanilla and cream together. Beat in eggs one at a time.  Alternate adding dry ingredients and milk.  Pour batter into a greased and line baking pan and bake at 350°F or 180°C for 35-45 minutes or until toothpick inserted into the center comes out clean. Piped Victorian Lace Cake

 I was thinking of how beautiful Victorian lace is. And I thought how pretty it would be draped over a cake. That's how this cake began. I frosted a 6-inch cake dummy with turquoise vegan American buttercream. And I put some white buttercream in a piping bag with a small round tip. Then I used some flower and leaf cutters to press a regular pattern into the cake. And I followed the pattern with the buttercream, adding small details along the way. Until I had followed all the lines. Oh, and I piped a pearl border along the bottom. Then I connected the designs together with more lines to look like a lace doily. Okay, I love this idea and I think it turned out beautiful. It just has a certain simple elegance. Bread Baking: Monkey Bread

 Monkey bread is a pull-apart bread made with caramel and cinnamon. I love nuts, so I threw in some walnuts. But it's a great sweet bread. Monkey Bread: 4 cups (500g) flour 1 generous cup (250mL) warm water 1 tbsp dry yeast 1 tsp salt 1/2 tsp sugar 1/2 cup (125g) melted butter 1 cup (200g) brown sugar 2 tsp cinnamon 1 cup (150g) chopped walnuts Combine warm water, yeast, and sugar. In a large mixing bowl, combine flour and salt and mix in yeast mixture.  Stir until you can't anymore. Then knead in the rest. You may not need quite all of the flour.  Once a soft dough has formed, cover and allow to rise for an hour.  Knead briefly. Roll into small balls, dip in melted butter, roll in brown sugar and cinnamon mixture and add a few walnuts. Place into ungreased bundt pan. Press them together slightly.  Bake at 350°F or 180°C for about 30 minutes. Turtle Cake

 This cake I wanted to make a cake that looks like a turtle. I started out with an 8-inch spice cake filled with French buttercream. Then I carved it into a turtle shell shape. And I frosted it with French buttercream. I covered the top and sides with kind of a muted dark green fondant. And I sculpted a head. And sea fins for the sides. I added a strip of lighter fondant around the edge of the turtle shell and added texture lines of the shell. And I added texture to the head, fins and tail. Finally, I painted over the whole cake with brown food coloring mixed with alcohol. Is this not an adorable turtle cake? It reminds me of a sea turtle.
