Recipe: Glorified Rice
This is an old-fashioned recipe that my mother used to make when I was a child. This is my own spin on it.
Glorified Rice:
2 cups (400g) cooked rice
1 cup (165g) crushed pineapple
1 cup (250g) fruit cocktail
1 cup (200g) canned cherries
1 cup (200g) mandarin oranges
1/2 cup (40g) shredded coconut
2 cups (450mL) whipping cream
Whip cream until it reaches soft peaks.
Fold whipped cream into rice.
Fold in rice, pineapple, fruit cocktail, cherries, mandarin oranges and coconut. This is really simply and easy recipe. It tastes great and you can include only your favorite fruits, leaving out any ingredient you don't care for.
