Baking Basics: What is a double boiler / baine Marie and how do you use it?

Nice easy one today. To make a double boiler, you need a small pot about a third of the way filled with water.  Then you need a metal or glass bowl that you can place on top of the pot without it falling into the pot and without touching the water below.  Then, you put your ingredients into the bowl, not the pot.  The heats your ingredients very gently and doesn't cook eggs or burn chocolate. At least not nearly as quickly as on a stove.  It should be a nice, snug fit.  The water below will eventually boil, but the contents of your bowl will take much longer to. Paw Patrol Cake

I let my three-year-old pick out the topic of this cake. She chose Paw Patrol. This post was not sponsored or affiliated with Spin Master Entertainment and fulfills the requirements of fair use. I started out stacking and frosting the cake. This is red velvet cake and vegan American buttercream.  I covered the cake with light blue fondant.  Then I got out a small circle cutter and a piping tip.  I also happened to have a Paw Patrol cookie cutter, but I wanted to make it lots of different colors, so it won't be quite so simple as just cutting it out.  First, I cut out the background in white.  This cake is only 4 inches in diameter, so I put the logo on the top.  Next, I used the impression of the cutter and pressed it into some red fondant.  And I only cut out the smaller of the shield forms as well as one larger circle and four small circles.  The larger circle I pressed to be a bit more triangular and placed the smal...

Recipe: Oatmeal Raisin Cookies

This is a soft, flavorful recipe for oatmeal raisin cookies. Oatmeal Raisin Cookies: 3/4 cup (190g) butter 1 cup (200g) brown sugar 1/2 cup (100g) sugar 2 eggs 1 tsp vanilla extract or 1 tbsp vanilla sugar 1 tsp baking powder 1/4 tsp baking soda 3/4 tsp cinnamon 1/4 tsp cloves 1 3/4 cup (220g) flour 2 cups (180g) oats 1 cup (150g) raisins (optional)  Cream butter. Add both sugars.  Cream them together.  Add eggs and beat well.  Add vanilla and all spices.  Add flour and mix.  Set aside mixer and fold in oats.  Fold in raisins, if desired.  Line a baking tray with parchment paper.  Drop cookies onto the paper about half a tablespoon at a time.  Bake at 350°F or 180°C for 10-12 minutes.  These are soft with crispy edges and have a lovely spice to them.  So delicious.  This recipe makes about 4 dozen cookies and the cookies last about a week to ten days.
