Buttercream Flowers Baby Shower Cake

 This cake was for a friend's baby shower.

This is a 9-inch vanilla cake filled and frosted with vanilla Swiss meringue buttercream. 


I colored the buttercream red, yellow, blue, purple and green. I put the red, yellow and blue in piping bags with star tips, purple in a piping bag with a petal tip and green in a piping bag with a leaf tip.
I piped some purple flowers with the petal tip in loops around a center.
Then I piped some red rosettes.
And some blue rosettes.
And some yellow drop flowers.
And I filled in the gaps with green leaves. 

I think this cake turned out beautiful. 
It was just what the mother-to-be requested.

After going through the effort of making my vanilla cake gluten free, dairy free and soy free, I needed a dairy free frosting. American buttercream is easy to make dairy free.  You can't buy butterfinger candy bars in Germany at the time of writing this blog. I was told it's because butterfinger candy bars are made with corn syrup from genetically modified corn, effectively banning them from the EU.  But I am a huge peanut butter fan. I miss butterfinger candy bars. Luckily, my dear mother had a copycat recipe that really works. Here we go. Butterfinger Candy Bars (Copycat): 2 cups (400g) sugar 1 cup (225mL) water 3/4 cup (180mL) corn or rice syrup 2 cups (480g) peanut butter 1 tsp baking soda Combine sugar, water and corn syrup in a small pot and heat it over the stove until it reaches hard crack stage. Line a baking sheet with parchment paper or butter it really well while the sugar syrup is cooking. Once the syrup has reach hard crack, remove from heat. Add baking soda and peanut butter. I've been thinking about all the things that have been cancelled because of Covid19 and I think the saddest is the weddings. So much expense, planning, excitement... gone. Now, I know most of you who had to reschedule your wedding will eventually have them. But I don't know how much money you would have lost because of the cancellation of your first planned wedding. So, I thought some of you might need to save money on your future wedding. So, I thought I would share with you a way you could make your own wedding cake out of a regular, plain sheet cake. I started out with a frosted sheet cake. You can frost it yourself or buy it frosted.  Then I thought I would use all of these tips, but I only ended up using the small round tip and the medium star tip.
