Poinsettia Wreath Cake

 It's Christmastime! I love making Christmas cakes. So, I thought I'd make one this year. So, this is a simple poinsettia wreath cake. I started out by frosting a six-inch cake dummy with vegan American buttercream. I also made some slightly dark red fondant. I also had some green fondant. I rolled it out and used a leaf plunger cutter to make a bunch of green leaves. I set them around in a wreath form. And added some on the inside of the wreath. Then I made a bunch of red leaves using the same plunger cutter. I laid them on the cake in groups of six. Overlapping slightly to form the wreath. Then I made some single poinsettia's on the side of the cake. Finally, I added the yellow clusters in the middle of the poinsettias. I am in love with this cake. It's so simple, yet so beautiful. Bread Baking: Pumpkin Scones

 These pumpkin scones are really delicious and are a perfect Fall treat. Pumpkin Scones: 2 cups (250g) flour 1 tbsp baking powder 1 tsp cinnamon 1 1/2 tsp pumpkin spice 1/2 tsp salt 1/2 cup (125g) butter 1/2 cup (110mL) whipping cream 1 egg 1/2 cup (115g) pumpkin puree 1/2 cup (100g) brown sugar 1 tsp vanilla extract or 1 tbsp vanilla sugar coarse sugar to sprinkle on top Combine dry ingredients in a large mixing bowl (flour, baking powder, cinnamon, pumpkin spice and salt).  Cut in butter until mixture resembles coarse crumbs.  In a separate bowl, combine whipping cream (leaving a tablespoon or two), egg, pumpkin, brown sugar and vanilla.  Pour over dry ingredients. Stir until combined. If the mixture is too sticky, add a tablespoon or two more flour. Dough should be possible to cut with a knife.  Press the dough onto a line baking sheet. Birch Bark Thanksgiving Cake

 This fall, I wanted to make a Thanksgiving cake and this year I wanted to do a birch bark effect with it. So, I stacked two 6-inch cake dummies on top of each other and frosted them with vegan American buttercream. I textured the top with a swirl pattern. I piped just a bit of black buttercream onto the sides. And smoothed it on to make it look like a birch tree. I used a toothpick to write the words Happy Thanksgiving on the top. And despite the preparation, I still managed to pipe it wonky. Sorry! I made a few acorns out of brown fondant. I placed them around the cake and started making fall leaves using colored fondant and a leaf cutter. I made fall leaves out of yellow, orange and red fondant and placed them around the cake. Cookie Monster Cake

 I wanted to make a cake reminiscent of Cookie Monster from Sesame Street.  I made some blue buttercream and a bit of black buttercream and I left just a bit white. I started out with an 8-inch cake dummy and frosted it with blue buttercream. I also put the white and black in piping bags with round piping tips and the blue in a piping bag with a grass tip. I piped some white eyes. And added black pupils looking in two different directions. And I piped a big, wide mouth with black buttercream. And I piped blue fur all over the side of the cake. And filled in the gaps on the top with the blue fur as well. I also had some homemade chocolate chip cookies. I broke them in pieces and placed them inside the mouth of Cookie Monster. If I could start the cake from the beginning, I would make the eyes bigger. But I love how this cake turned out. It so simple, but so Cookie Monster.
